Recipe for green fried tomatoes

End of season green tomatoes that are still green can be sliced into rounds about half a finger's width wide and lightly salted.

Next sieve a large cupful of plain flour into a bowl

Add 2 teaspoons of paprika, lots of freshly ground black pepper (about 30 turns off a peppermill should do it) and a pinch of cayenne pepper to the flower and give it a good mix.

Now lightly flour both sides of the sliced green tomatoes and fry them for 3 minutes on both sides in a mix of sunflower oil and butter.

Your fried green tomatoes are ready.
