Ingredients for Thai Salmon Curry
Serves 2
2 portions of Salmon Fillet, skinned and cubed
1 red pepper seeded and chopped
1 small onion
100g green beans, cut into bitesize pieces
100g red thai curry paste
400ml Coconut Milk
Oil for frying
1 Lime
Coriander (Cilantro) leaves to garnish
Directions for making Thai Salmon Curry
This really is a simple recipe and a great flavour that all the family will love. If you don't like heat, just reduce the quantity of red thai curry paste. On the other hand, if you like it spicy, just add more red thai curry paste. You can make your own curry paste (loads of recipes on the web) or buy a jar from the local grocers. If you buy it, check the recipe list. Most of them are brilliant with all natural ingredients, but one or two of the cheaper ones are full of junk. If you read a label and don't understand it, it is probably junk.Anyway, on with the recipe...Firstly, fry the onion on a low heat for about five minutes until translucent. Add the pepper and fry for a further 3 minutes. Add the salmon and cook for a minute before adding the curry paste and cook for a futher minute before adding the coconut milk. Simmer for about 5 minutes until the fish is cooked and serve with Jasmine rice and garnish with shredded corriander leaves and a wedge of lime.
