Ingredients for Macaroni and Cheese

250g macaroni or similar pasta
40g flour
40g butter
150g milk
150g cheddar cheese
50g Parmesan cheese
50 g breadcrumbs
salt and pepper
cayenne pepper


Directions for making Macaroni and Cheese

First warm the milk in a saucepan, add a bayleaf and quarter onion, turn off the heat and let the flavours gently infuse into the milk. In a fresh pan, boil the pasta till almost cooked (about 7 minutes will suffice), drain it, rinse and set aside. Make a 'roux' (technical term, sorry) by whisking the flour and water over a low heat and then adding the infused milk a little at a time to make a white sauce. Turn this into a velvety smooth cheese sauce by adding the cheddar and then put the macaroni in an ovenproof dish, pour over the cheese sauce. Add cayenne, salt and pepper to taste and give it a stir. Now sprinkle grated parmesan and breadcrumbs over the top and bake the macaroni cheese in middle of oven 25 to 30 minutes. Deeply delicious comfort food.
