Ingredients for Colcannon with Turnip
- Four large potatoes
- Four large turnips
- 1 small cabbage
- 250ml Milk
- 6 Tablespoons Butter
- salt and pepper to taste
Directions for making Colcannon with Turnip
Colcannon is an irish staple dish usually made from mashed potatoes and cabbage, butter and salt. Optional extras are usually limited to cream, leeks, onions, and bacon but this version adds turnip alongside the cabbage to give a lovely texture and sweeter flavour.
Cut the potatoes into quarters. Cut the turnip to the same size. Boil the potatoes and turnips together for 20 minutes then drain.
Cut the cabbage into 2 inch pieces and steam for about 8 minutes. While this is steaming, mash the potaotes, turnips, milk and butter together. Season to taste.
Finally drain the cabbage, add to the mash, stir well in and serve with roast or boiled meat.
