Ingredients for Artichoke Soup
1kg jerusalem artichokes
100g butter
2 litres organic chicken stock
100ml double cream
2 medium onions
2 cloves of garlic, crushed
Salt and pepper
Directions for making Artichoke Soup
Jerusalem artichokes are the tubers of a sunflower variety and they are famous for their nutty, or smoky taste. Great roasted or boiled and at their best of all when turned into a creamy soup.
Sweat the onions in butter. After 5 mins add the minced garlic and add diced artichokes. Fry for a further 30 seconds. Pour in the stock and simmer for 30 mins before blending. Now add the cream, season and serve. However, be warned; too many artichokes can lead to embarrassing build ups of gas.
