Chicken curry recipe

I love a chicken curry. The spices are absorbed by the soft flesh to make a tender, fiery and deeply satisfying dish that whisks you away to dreams of hot nights in the exotic east.

Chicken Curry recipe ingredients

8 free-range chicken thighs
5 medium tomatoes
1 finely chopped onion
3 tbsp sunflower oil
thumbnail sized piece of root ginger
4 finely chopped garlic cloves
2 finely chopped green chillies
1 tsp coriander powder
1 tsp cumin powder
half tsp turmeric powder
salt and freshly ground black pepper
2 tbsp low fat yoghurt
half a lemon

Chicken Curry recipe instructions

Firstly skin the tomatoes and set aside. Next fry the onion in the sunflower oil on a low heat for five minutes. Add the garlic, ginger and chilli and then throw in the spices and still well.

Add the chicken, tomatoes and about 100ml of water, cook for 15 minutes before covering with a lid and cooking for a further half hour.

Add the yogurt and lemon for the last two minutes of cooking before serving with rice or naan bread.
