Nicola's Casserole Recipe has evolved over the years and in my opinion is pretty darn perfect. Close to both French Cassoulet and English Lancashire HotPot this is an easy to cook dish that tastes magnificent.

Instructions for this simple sausage and bean casserole

In a casserole dish on the hob, fry the bacon, onion, garlic and sausages in the goose fat for 7 or 8 minutes on a medium heat. We don't want everything going black, but a bit of browning is good.

Add the rest of the ingredients and stir well. Pop the lid on the casserole and cook in the oven at 180 degrees (Gas Mark 4) for for about one hour.

You can add an optional pinch of paprika before serving up with bread or potatoes.
