Boxty - Traditional Irish Potatoes

Boxty is a brilliant simple lunch of potato pancakes, beloved by Irish kids and adults alike.


The mash potatoes (usually leftovers from an earlier meal are bulked out with raw grated potatoes. The flour is added and the mix is seasoned with salt and pepper.

Next beat the large egg and add it to the potato mix.

Thin with milk until it is the consistency of a thick batter

Cook a spoonful of the batter, dropped into a hot frying pan to make a thick potato pancake and fry over a moderate heat for 3-4 minutes, turning once each side is nicely golden.

Best served with homemade apple sauce when fresh from the frying pan.
