Our best spinach dip recipes
Spinach is so good for you, so adults and children alike can dip in to these recipies with gusto. Take about a pound of spinach and wash well. remove really woody stems, but dont get too hung up on getting rid of stems. Place the damp spinach in a saucepan (you dont need any water or butter or oil here) and cook for just about a minute, which is enough to wilt the stems and no more. Take off the heat and leave to cool.
Pour a pot of plain yogurt into a large bowl. Add four tablespoons of mayonaise and half a cucumber, chopped into fine cubes.
Using a pestle and mortar, mash 2 cloves of garlic and 2 scallions into a paste (add some salt to make it crush more easily) Now add this to the yougurt and mix well.
Chop the cooled spinach finely and add it to the yogurt.
Add a handful of chopped tarragon and a teaspoon of white-wine vinegar.
Chill the dip for at least 20 minutes before serving with celery sticks, tortilla chips or whatever takes your fancy.
