Caribbean Barbecue Peaches

Peaches are so easy to grill on the barbie.

Cut a peach in half and remove the stone. Now sprinkle the cut halves with rum and leave for at least 20 minutes to allow the West Indies rum to soak in, If you have the time leave for 4 hours.

While you are waiting for the flavour of Jamaica to soak into the fruit, sprinkle two tablespoons of desicated coconut into a frying pan (no oil) and heat, stiring regularly till the coconut has gone a golden brown colour. Remove from the heat before the coconut burns though.

Barbecue peaches

Sprinkle 1 teaspoon of icing sugar onto the cut halves of the peaches and place onto the barbecue, cut side down for about 3 minutes until slightly soft and nicely grilled.

Serve with sliced strawberries or bananas, and some vanilla ice cream sprinkled with the toasted coconut.
