Bagels (or baegels) are the destinctive round bread rolls with a hole in the middle that originated in the Jewish communities. The smooth glossy surface that contrasts so well with the soft dough inside is achieved by brifly boling the rolls before popping them into the bread oven.

For these appetizer recipes it is best to use 'mini bagels' , but if the nrmal sized ones are all that is available, simply cut the finished baegel slice into four when serving.

artichoke and sun-dried tomato bagels

(serves 12)

preheat the oven to 190 degrees Centigrade. Roughly chop up the contents of a 1 (14-ounce) can of drained artichoke hearts into a bowl. Add a good handful of sun-dried tomatoes and a handful of basil leaves, torn into pieces.
Add as few or as many sliced black olives as you like
Season with salt and pepper and mix well.

Split 12 plain mini bagels in half and lay on a baking sheet
Drizzle a little olive oil oil on the baegels and then spoon a small pile of the artichoke mix on top. Sprinkle with freshly grated parmesan cheese (never use the pre-grated stuff. Always grate it yourself) and pop in the oven for 10 minutes
