First make a glaze by melting the butter, sugar and lemon juice together in a saucepan. Peel the pears, halve them and remove the cores. Place the pear halves on a baking tray and cover with the glaze. Now grill for 5 minutes, turn them over, apply more glaze and grill for a further 3 minutes or until the edges look too delicious for words. Meanwhile toast the ginger cake slices. Waitrose recommended their own 'ginger and lemon cake' which looks lush, but I did it with a traditional Jamaican Ginger Cake and it worked brilliantly well. Now, spread with a little mascarpone (or creme fraiche) and top with a glazed pear half to serve. Goes great with a cup of tea.
